Celiac disease is a genetic, digestive disorder that causes damage to the small intestine and interrupts the body’s nutrient absorption from food. People with celiac disease can’t tolerate gluten, a protein found in wheat, rye and barley. Fortunately, there are now many natural and processed food choices available for the 1 out of every 133 people (estimated) who are gluten-intolerant. Some experts blame this epic problem on genetically modified (GM) food which has been allowed to make up about 85% of our food supply, according to some estimates. This Frank-n-food probably is what is causing such severe reactions worldwide.
I am very much a GF newbie, and so am very willing to learn from you! Please contact me with comments, ideas or just to connect: glutenfreesatx@gmail.com
